LEMON MISO CASHEW SAUCE
INGREDIENTS:
1/3 cup of cashews
1-2 lemons
1/2 cup hot water
1 tbsp white miso paste
1-2 garlic gloves – peeled
PREPARATION:
Add the cashews and hot water to a small bowl. Let sit for at least 10 minutes.
Put the cashews and water in a blender or food processor with lemon, garlic, white miso paste and salt and pepper to taste. Add red pepper flakes if desire. Blend until smooth. Adapted FROM: PURPLE CARROT.
