3-5 Sweet Potatoes (depends on size) or about 3 cups pre cut.
1 cup Farro (uncooked)
1 tsp olive or avocado oil or spray
Handful of arugula
1-2 tbsp almond slices
1-2 tbsp pumpkin seeds
1-2 tbsp pumpkin
1-2 tbsp pine nuts (optional)
1-2 tbsp cranberries or crasin-berries
Add protein of choice (tofu, chicken…): optional
For each serving mix about 1 tsp of olive oil and 1 tsp of balsamic vinegar add 1 tsp of Italian seasoning.
- Cook Farro according to package directions.
- Preheat oven to 325
- Cook sweet potato cubes for 15 minutes than cook on 425 until roasted and cooked to your desire (not too mushy)
- Create bowl. Add arugula, cooked farro, roasted sweet potatoes and protein if using. Top with seeds and raisins.
- Lightly top with olive oil, balsamic vinegar and Italian seasoning.
