CREAMY WILD RICE MUSHROOM STEW – CROCK POT
INGREDIENTS:
1 medium yellow onion diced
3-5 stalks of celery diced
1 cup or more carrots diced
8 ounces any type of mushrooms sliced (or a mix of mushrooms). NOTE: The recipe also calls for crimini mushrooms — but I couldn’t find them at 2 different stores so I used white button which is the same species as white button. You can use any mushroom or a mix as listed above.
1 cup wild and brown rice blend (Bob’s Red Mill is a good option or use your favorite)
1/2 cup green lentils
3 cups organic vegetable broth
4 gloves of garlic minced
2 BS Dijon mustard
1 TBS low sodium tamarin
3 tsp savory or thyme
3 tsp savory or thyme
2 tsp poultry seasoning (I used another seasoning I use on veggies). You can DIY your own poultry seasoning — google poultry seasoning and us what you got!
2 bay leaves
1 tsp fresh cracked black pepper
Dash of salt (I like Celtic Sea Salt)
Set aside for later:
3 cups of kale coarsely chopped
1/4 cup whole wheat flour (I used almond flour– which was not as thick)
1 12 cups unsweetened plant milk
Optional: Pine Nuts
PREPARATION:
Add all ingredients to the instant pot – use the soup setting- 30 minutes- and allow to naturally release.
NOTE: I used my Aroma Professional Plus which is a rice cooker — (soup and other functions as well) — I am not sure if it is considered an instant pot..it says it’s a rice cooker, multi cooker, slow cooker, food steamer (I got it b/c I wanted something smaller than my crock pot and a place where I trained — swears by it)….I used the high – soup function and gave it a taste at 30 minutes –let it cook a few more minutes than added the kale, etc.
I have a crock pot too — which I would’ve used same as above on high…but it’s so big.
Remove bay leaves.
In a small saucepan slowly combine and whisk steadily: 1/4 cup whole wheat flour (I used almond flour) and 1 cup unsweetened plant milk.
Whisk flour and plant milk into a roux until thickened – remove from heat- stir into instant pot stew, then add the kale. Close the lid and let sit for 5 minutes. Option: Top with Pine Nuts. Also add more vegetable broth for more liquid — this soup gets thick! EnJOY.
