Sweet Potato and Zucchini Stew
INGREDIENTS:
1 chopped onion
2 1/2 cups diced sweet potato
3 garlic glove, minced
2 1/2 cups roughly chopped zucchini
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
1 teaspoon paprika
1/2 teaspoon red pepper flakes
1 cup diced tomato
2 Tablespoons tomato past (without additives)
1 cup hot water
1/4 cup freshly packed cilantro, roughly chopped to serve
PREPARATION:
Place a saucepan on medium heat and add the onion, sweet potato and garlic. Cook for 3-5 minutes, until the onion is soft. If the vegetables stick to the pan, add a bit of water.
Add the zucchini, together with the ground cumin, ground coriander, turmeric, paprika, red pepper flakes, tomato, tomato paste, and the cup of hot water. Stir well. Place the lid on, lower the heat, and simmer for 10 minutes.
Remove the lid and cook for another 10 minutes until sweet potato is cooked through and the stew has thickened.
