INGREDIENTS:
2 garlic gloves
1 lemon
1/2 oz fresh mint
Salt and Pepper to taste
3/4 cup walnuts
2 oz baby spinach (1-2 cups)
2 Tablespoons Nutritional Yeast
2-3 Tablespoons of water
PREPARATION:
Mince the garlic, have and juice the lemon remove stems from the mint leaves and spinach. Add all the ingredients (add as you go) to a food processor Pulse until Mint Walnut Pesto is well combined but not completely smooth. Add more water if it is too dry. FROM: “Purple Carrot”.
