INGREDIENTS:
1/4-1/2 cup cashews
1/2 cup warm to hot water
1 glove garlic, minced
Juice of 1 -2 limes
1 jalapeño, chopped (use less for less hot)
pinch of salt and pepper
PREPARATION:
FOR THE Jalapeño Cashew Sauce: Soak the cashews in the warm to hot water for 15 minutes. Add cashews, and their soaked water (less if you want a thicker sauce), garlic, lime juice, chopped jalapeño and a pinch of salt and pepper to a blender and blend.
